• Casa Azteca, 1612 Clark St. Road, Aurelius: unsatisfactory (Dec. 10). Approximately 12 hard taco shells were noted to be removed from a cooling rack and placed in a bin. The individual handling the taco shells was observed to not be using gloves, a utensil, or proper hand barrier to transfer the taco shells. The shells were voluntarily discarded at the time of inspection. Two lemon wedges were noted to be placed in glasses of water ready for service. The individual handling the lemon wedges was observed to not be using gloves, a utensil, or proper hand barrier to transfer the lemon wedges. The glasses of water containing the wedges were voluntarily discarded at the time of inspection. A spray bottle containing an unknown chemical was observed on a shelf in the dish washing area unlabeled. Interview with the operator indicated that the bottle contained an acid. The spray bottle of solution was voluntarily discarded at the time of inspection. One 4-inch pan of refried beans was observed cooling on the counter next to a hot holding unit. The temperature of the beans was noted to be 119 degrees Fahrenheit. Interview with the operator indicated the beans had been removed from oven and placed to cool on the counter for approximately one hour. It was determined the pan would not have cooled to under 45 degrees Fahrenheit within the required cooling time. The pan was moved to the cooler at the time of inspection. Approximately two dozen chicken tenders were observed thawing on the counter of the food service prep area. The chicken tenders were at a temperature of 49-53 degrees Fahrenheit. Interview with the operator indicated they had been thawing for approximately 20 minutes at the time of inspection. These items were moved to the walk-in cooler at the time of inspection. Four containers of margarita mix and several cases of beer were noted to be actively stored on the floor of the bar walk in cooler several cases of liquor bottles were noted to be actively stored on the floor of the bar dry storage area. Utensils containing food debris were observed stored in the drawer with clean sanitized utensils. Facility lacks chemical test strips as required for low temperature dishwashers. The industrial can opener located at the vegetable prep station was observed to have food debris present. Two cans of Tom Cat rodent repellent was observed on the maintenance shelving located in the back storage area. This product is not an approved method for pest management.

• Sakura Buffet, 315 Genesee St., Auburn: satisfactory (Dec. 11). Bins containing precooked chicken and pork are double stacked on a mobile cart in the main preparation area. Multiple food products are stored uncovered in the walk-in freezer. Serving spoons improperly stored inside containers holding prepared food items. Forty pounds of raw chicken wings observed to be actively thawing in the three-bay sink. The wings were still frozen and moved to the walk-in cooler to thaw. Shelving in the walk-in cooler and freezer are no longer smooth and easily cleanable due to rust buildup. Cracked broken floor tiles and missing portions of corner bead observed throughout a facility.
• Applebee’s Neighborhood Grille & Bar, 221 Grant Ave., Auburn: satisfactory (Dec. 11). Mildew buildup observed in the ice well of the of the ice maker. Significant mildew buildup observed on the walls throughout the facility. Missing large portions of grout between tiles in the main kitchen.
• Giuseppe’s Pizzeria, 75 Owasco St., Auburn: satisfactory (Dec. 11).
• Don Juan Restaurant, 104 Chapman Ave., Auburn: satisfactory (Dec. 12). Missing a large portion of baseboard on the west wall of the kitchen.
• Simple Roast Coffee, 321 Genesee St., Auburn: satisfactory (Dec. 12). Hand washing station lacks single service towels or hand drying devices. Paper towels replaced at time of inspection.
• Aurora Inn, 391 Main St., Aurora: unsatisfactory (Dec. 12). Food service worker was observed assembling a salad for retail sale. The worker was removing chopped lettuce from a stainless steel pan and placing it the retail container with their bare hands. The lettuce was voluntarily discarded at the time of inspection. The worker washed their hands and donned gloves before returning to work.
