• Ichiban, 181 Grant Ave., Auburn: unsatisfactory (Dec. 12). Approximately 1 gallon of cooked rice actively being stored on the counter observed to have an ambient temperateness of 78 degrees Fahrenheit. The rice was to be used for fried rice and was removed from the walk-in cooler earlier in the day, Staff was unable to determine how long the rice had been on the counter. The rice was voluntarily discarded at the time of inspection. Knives and cleavers are improperly stored between equipment on the main cook line. The door gaskets for the double door lift top cooler are cracked and torn. The door gasket to the walk-in cooler is cracked torn and unable to provide an adequate seal. Sanitizing solution was not properly prepared at the time of inspection. Food contact surfaces are not adequately sanitized during food preparation due to lack of sanitizing solution. The door handles of the kitchen equipment are covered in a layer of food debris and grease. The floor under the shelving in the walk-in cooler is covered in a viscus mixture of stale mop water and food debris. Significant grease and food debris build observed under equipment, sinks and throughout the kitchen. The filters and hood system require cleaning due to grease buildup.

Both fryers have an accumulation of grease buildup on surface and sides. Fryers have excessive quantity of food debris noted on surface. Floor tiles missing and cracked throughout kitchen area. Ceiling in banquet dining area (near restrooms) in disrepair.

• Camerons Bakery, 169 Grant Ave., Auburn: satisfactory (Dec. 17). Vent hood on fryer has a buildup of food debris/grease. Floor tiles missing and cracked throughout kitchen area.
• Arby’s, 193 Grant Ave., Auburn: satisfactory (Dec. 17). Tongs were noted to be actively stored within container of chicken tenders in stand up freezer after being used to add a portion of the tenders to the fryer.

• Nino’s Pizzeria, 115 Main St., Port Byron: satisfactory (Dec. 18). The cutting board for the main sandwich station is cracked in half creating an non-cleanable surface. The double door sandwich unit in the kitchen is missing an inside door panel leaving foam insulation exposed. A utility light attached to an extension cord is being used as the primary light for the walk-in cooler.
